Moisture percentage tells you how much water is in your coffee. It doesn't tell you whether that water is a problem. Water activity (aw) measures how available that water is - and it's the number that determines whether your green coffee is ageing gracefully in storage or quietly deteriorating.

Why Water Activity, Not Just Moisture?

Two coffees can have identical moisture content and completely different stability. That's because moisture percentage measures total water, while water activity measures how much of that water is free to support microbial growth or chemical change. Above 0.70 aw, the risk of mould and mycotoxin development rises significantly. Too low — around 0.30 aw — and the delicate acids and sugars that give a coffee its vibrancy start breaking down. Water activity is the number that tells you where your coffee sits between those two failure modes. If you're buying green coffee to store and roast over months, it's the single most useful stability metric you can have.

What's the difference between this and the CoffMeter M1?

The M1 measures moisture content and density — the numbers that affect how a coffee behaves in the roaster. The W1 measures water activity — the number that determines how stable a coffee is in storage. They answer different questions, and serious green coffee buyers often want both: the M1 for roast planning, the W1 for stock management.

What water activity should my green coffee be?

Most specialty green coffee sits comfortably in the 0.45–0.65 aw range. Above 0.70 aw, mould and mycotoxin risk rises significantly. Very low readings (around 0.30 aw) suggest the coffee has dried out to the point where acids and sugars are degrading. The W1 lets you see exactly where each lot sits and track it over time.

How long does a measurement take?

Around two minutes per sample. Water activity measurement works by letting the sample reach equilibrium with the air in the chamber, so it's inherently slower than a moisture reading - but two minutes is fast for this type of instrument.

How does calibration work?

The W1 uses a one-button calibration process with a saturated salt solution - a vial is included in the box. Salt solutions have a known, stable water activity, which makes them a reliable reference standard. No lab required.

Will readings change if I move the device or the seasons change?

No - the W1 has integrated temperature, humidity, and pressure sensors that automatically compensate for your environment. Readings stay consistent whether you're measuring in summer or winter, at sea level or altitude.
