  • What makes yellow honey different

    In honey processing, the colour describes how much mucilage stays on and how the coffee dries. Yellow honeys keep a moderate amount and usually dry with more sun and turning than red or black honeys, so drying is quicker and fermentation lighter.   • Roasting yellow honey coffee

    Yellow honeys roast much like a washed coffee of similar density and take energy well, but they can colour slightly earlier. Expect a clean, sweet cup with gentle fruit and a rounder body than washed: honey, brown sugar, stone fruit and florals.

What is the difference between yellow honey and black honey?

Black honey keeps the most mucilage and dries slowly in shade, giving a heavier, fruitier, more natural-like cup. Yellow honey is lighter, cleaner and closer to washed. See our black honey range.

Is yellow honey coffee sweet?

It's typically sweeter and rounder than a washed coffee from the same farm, without the heavy fruit of a natural. No honey is added – the sweetness comes from the coffee.
