Coffees are sourced from the high-altitude regions of Fraylesca and Los Altos in Chiapas, Mexico. Edelmira works directly with small organic farmers and partner cooperatives, and also collaborates with leading fincas to access advanced processing methods.

Edelmira offers two main categories:
– Community Lots (80–85 points): Organic coffees from producer communities or cooperatives, reflecting local terroir.
– Microlots (85+ points): Exceptional coffees grown on high-altitude plots and harvested with extreme care.

Edelmira works alongside farmers year-round, offering technical assistance from agronomists, training in organic and sustainable practices, and fair, quality-linked payments. This helps build long-term resilience and encourages continuous improvement at origin.
