Enjoy the rich flavors of this Decaffeinated Castillo, crafted with care through a natural process that preserves its true character. Starting with 95% mature cherries, the beans are washed with ozonated water and undergo anaerobic fermentation for 48 hours. After pulping, they undergo another 48-hour anaerobic treatment before being thoroughly washed with hot water and mechanically dried. The caffeine is then gently removed using natural Ethyl Acetate from sugar cane and high mountain spring water, ensuring no synthetic additives. The result is a decaf coffee that delivers full, satisfying flavour without compromise.

Monitor the roast closely, especially as you approach the first crack—decaf beans can develop more quickly due to their slightly altered structure. Aim for a slower, more controlled development phase to bring out the rich notes of stone fruit, malt, and caramel. Yenny Esperanza Bermudez, a lawyer by profession, found a new passion in coffee cultivation, transforming her life and the lives of her four brothers. In 2009, they embarked on a shared journey, acquiring Finca El Paraíso Villa Esperanza with a vision to create a thriving family business that would stand the test of time for future generations.

Nestled at 1,700 meters above sea level in the picturesque region of Tambo, Cauca, the 27-hectare farm enjoys a warm and temperate climate, perfect for growing exceptional coffee. Just 28 km from Popayan and 10 km from Tambo, the farm is blessed with an ideal average temperature of 18°C, contributing to the rich flavors of its coffee.

At Finca El Paraíso, Yenny and her family oversee every step of the coffee production process with unwavering dedication and trust, always striving to enhance the quality of their beans. With over a decade of experience, they have committed themselves to continuous improvement, both in production techniques and farm facilities. The family welcomes visitors to experience firsthand the exceptional coffee that is a testament to their hard work and passion.

Cat is a product and graphic designer and Pierre is a composer, guitarist and a singer who decided to swap careers to drink coffee all day long with a purpose.

After training and working for many years as a specialty coffee barista in the UK, we were inspired to move into the green coffee trade in the country we love and know best, Colombia.

We now apply our expertise to find the best beans at origin, whilst matching European quality standards and building long term relationships with local farmers.

After 5 years trading coffee worldwide Cat and Pierre became producers in their farm called Cata Reserva in Timana Huila. It is a 30 hectares farm which half of it is a natural reserve. As exporters with a vision on traceability saw the positive impact on the producers farm like Nestor Lasso, today they became producers to carry on exchanging knowledge now not only from a exporter perspective but through a producers view too. Cata's attention to detail on regenerating the land with clean agriculture protocols as well as connecting with a community will benefit both ends production and roasters trade.

The intelectual part of coffee is fun, we want to share what we know, we want to learn too, we want to connect better for a better trade sustainable for all.
