Starting with 95% mature cherries, the beans are washed with ozonated water and undergo anaerobic fermentation for 48 hours. After pulping, they undergo another 48-hour anaerobic treatment before being thoroughly washed with hot water and mechanically dried. The caffeine is then gently removed using natural Ethyl Acetate from sugar cane and high mountain spring water, ensuring no synthetic additives. The result is a decaf coffee that delivers full, satisfying flavour without compromise.
