Through their work with Cata Export, the community combines long-standing farming traditions with training and quality support that opens access to sustainable, global markets.
This washed Castillo lot reflects that balance of heritage and precision. After selective hand-picking, cherries are pulped and undergo 48 hours of controlled oxidation to bring clarity and complexity to the cup. The coffee is then dried slowly on raised beds to 11% moisture content, ensuring stability and structure. The result is a clean, balanced brew with light caramel sweetness, soft toffee, bright orange, and a touch of walnut — a clear expression of the Timaná community’s dedication.
