Zarza, from the Silvia Valderama Estate Laureles, is a masterclass in meticulous processing and vibrant flavor. This washed coffee delivers a tropical symphony of juicy mango and bright lime, balanced by a creamy milk chocolate finish. Grown at an altitude of 1400–1500 m.a.s.l., it reflects both the region's unique terroir and the producer's dedication to quality.

Each step of its journey is carefully crafted to preserve and enhance its character:

  • Step 1: Mature cherries are manually selected for peak quality.
  • Step 2: Dry pulping followed by oxidation in plastic bags for 24 hours.
  • Step 3: Submerged fermentation for 60 hours, with temperatures carefully monitored between 30 and 33°C.
  • Step 4: Cherries are washed to remove mucilage and impurities, ensuring a clean, vibrant cup.
  • Step 5: Finally, drying in marquesinas for 5–12 days under controlled temperatures, depending on weather conditions.

The result is a coffee with an exquisite balance of tropical vibrancy, citrus brightness, and comforting sweetness, offering a taste that lingers with elegance and complexity.

For generations, the Gasca family, one of Huila’s proud lineages, has preserved and passed down their expertise, ensuring that each harvest carries both the legacy and future of Colombian coffee culture.

Cat is a product and graphic designer and Pierre is a composer, guitarist and a singer who decided to swap careers to drink coffee all day long with a purpose.

After training and working for many years as a specialty coffee barista in the UK, we were inspired to move into the green coffee trade in the country we love and know best, Colombia.

We now apply our expertise to find the best beans at origin, whilst matching European quality standards and building long term relationships with local farmers.

After 5 years trading coffee worldwide Cat and Pierre became producers in their farm called Cata Reserva in Timana Huila. It is a 30 hectares farm which half of it is a natural reserve. As exporters with a vision on traceability saw the positive impact on the producers farm like Nestor Lasso, today they became producers to carry on exchanging knowledge now not only from a exporter perspective but through a producers view too. Cata's attention to detail on regenerating the land with clean agriculture protocols as well as connecting with a community will benefit both ends production and roasters trade.

The intelectual part of coffee is fun, we want to share what we know, we want to learn too, we want to connect better for a better trade sustainable for all.
