Semi-Carbonic Maceration process is an innovative approach that blends anaerobic and aerobic fermentation, creating a dual-environment within the fermentation bags. Coffee cherries near the walls of the bags are in contact with oxygen, while the cherries in the middle experience an oxygen-free environment. This meticulous process is designed to acidify the coffee and harness the natural bacteria present in the cherries, resulting in a more acidic and complex flavor profile.

The outcome of this method is a unique coffee with vibrant notes of tropical yellow Brazilian fruits such as cajá, starfruit, mango, and cupuaçu. By developing this method, we aim to explore and enhance the natural flavors and acidity of our coffee, providing a distinctive and enriching experience for coffee enthusiasts.
