High in the remote mountains of Letefoho, the small community of Remagoa is producing something remarkable. At 1,850masl, this is one of the most isolated places Karst Organics works with. Until recently, selling coffee here meant a daily 2km hike through dense forest, carrying freshly picked cherries to wait by the roadside for passing buyers offering the lowest prices. In 2022, that changed.

By processing parchment at home, farmers now have full control over their coffee. Cherries are selectively picked, floated to remove defects, then pulped and fermented for 40–44 hours. After thorough washing—up to eight times—the beans dry on raised beds for 7–10 days before resting for six weeks. Once ready, they are transported to Dili for final grading and sorting.

This fully washed coffee is crisp, clean, and vibrant, with a clarity that reflects the precision behind every step of its processing. A high-altitude lot that highlights both the quality of the region and the dedication of the farmers who produce it.

Roasting Recommendation

In my experience, coffees from Karst and their partner producers in Letefoho are notably dense, with relatively high moisture content. They share similarities with washed coffees from East Africa in terms of flavor profile and characteristics, and can be roasted using a similar approach. When roasting these coffees, it’s essential to start with higher initial heat to effectively remove moisture and avoid an extended color change phase. Maintaining consistent energy throughout the roast, particularly leading into the first crack, is crucial. These coffees are known for having a strong, pronounced first crack, and it’s common for the Rate of Rise (ROR) to drop off sharply afterward. To avoid any potential crashes, especially if this aligns with your roasting style, preemptive adjustments might be needed.

Karst Organics are now in their third year of partnership with the small community of Remagoa—one of the most remote groups they work with. Perched at 1,850masl in the most easterly part of Letefoho, the village has no direct road access. Reaching the nearest dirt track requires a 2km hike through dense forest—a journey that once made selling coffee a major challenge.

Before this partnership, farmers harvested cherries daily, carrying them through the forest to wait by the roadside for passing trucks. Buyers offered the lowest commercial rates—often just $0.32 per kilo—leaving growers with little reward for their efforts. In 2022, Maritu de Deus approached Karst Organics on behalf of his father-in-law, Fernando, now the lead farmer in Remagoa, to explore their parchment buying model. It was an opportunity they were eager to support.

Processing parchment in individual households has transformed the way Remagoa’s farmers work. While harvesting remains a labour-intensive process, processing at home eliminates the daily trek to find a buyer. With a small investment from Karst Organics in materials and training, the community has embraced speciality processing, improving both quality and income. Three years on, eight dedicated farmers are thriving, and trust between Karst and the community is firmly established.

Even now, parchment must be transported on horseback through the forest at the end of the harvest, but this happens once a year—no longer part of the daily grind.

Our direct collaboration with producers within their coffee forests and households has naturally built a foundation of mutual trust and respect. Together, we navigate challenges and respond to needs as they arise, offering support wherever it’s needed. This includes direct investments in farm-level infrastructure, specialized training in processing specialty coffee, and hands-on assistance during critical harvest times—whether it’s lifting, carrying, picking, sorting, pulping, washing, or drying coffee.
