This coffee was processed using Sheba’s Anaerobic fermentation method. The cherries are placed onto raised beds to be partially dried. Next, the cherries are placed into ecotact bags and left to ferment. Once fermented, they are returned to the beds; regularly turned daily, making sure they are dried evenly.

For this lot, think orange marmalade and milk chocolate, with phosphoric acids helping to sustain the cup’s delicate sweetness.

Sourced from the outskirts of the Governorate of Sana’a, Haraz is one of the most celebrated coffee-producing regions in Yemen. Known for its beautiful landscapes, the region is often referred to as ‘the land above the clouds' due to its extraordinary altitudes. Being so separated has helped the people of Haraz to maintain their distinct culture and ancient growing traditions, while other regions have struggled.

At the age of 28, Mohamed Abdullah Al Wadi is regarded as a young farmer. One of the highest in the region, Mohamed's farm is owned by his father, Abdullah. Abdullah helps Mohamed by teaching him how to plant and take care of his coffee.

Sheba Coffee started in 2020 with a mission to build a new legacy for Yemen’s future. By working with a large network of producers, Sheba helps source, process, mill, bag and export coffees directly from origin: to roaster around the world.
