This coffee was processed using Sheba’s Anaerobic fermentation method. The cherries are placed onto raised beds to be partially dried. Next, the cherries are placed into ecotact bags and left to ferment. Once fermented, they are returned to the beds; regularly turned daily, making sure they are dried evenly.

The anaerobic has given this coffee complex acidity, a round, smooth body, and plenty of citrus notes.

Set between two steep mountains in a deep valley, or wadi as known locally, the small village of Al Sana sits to the West of the central coffees growing Governorate of Ibb. Home to stunning scenery and fertile soils, producers in the governate can produce some of the best coffees Yemen has to offer.
At the age of 27, Fouad Qassem Awadeh is regarded as a young coffee grower. With a passion for his craft, Fouad has not always been a farmer; having returned to coffee cultivation after losing his job early in the ongoing Yemeni civil war. With the help of his father, today he grows coffee to support his wife and young child.

Sheba Coffee started in 2020 with a mission to build a new legacy for Yemen’s future. By working with a large network of producers, Sheba helps source, process, mill, bag and export coffees directly from origin: to roaster around the world.
