This washed Caturra comes from Elvis Choquehuanca, a smallholder farmer near Copacabana in Bolivia’s Caranavi province. Since 2015, Elvis has been part of the Sol de la Mañana Project – a long-term initiative led by the Rodriguez family to support producers in improving both quality and yield through hands-on training and agronomic support.

Once harvested, Elvis’s cherries are delivered to the Rodriguez family’s central wet mill. Here, they undergo a full float and sort, followed by depulping and fermentation in stainless steel tanks for up to 48 hours. After washing, the coffee is gently dried in mechanical dryers for around 100 hours at controlled low temperatures. The final step is dry milling, grading and sorting at the Rodriguez dry mill in Caranavi.

This setup allows for full traceability and quality control from farm to export, with each stage carefully managed to bring out the best in the coffee. It’s a model that’s helped transform smallholder production across the region – and this lot is a clear example of the results.

Cupping Notes

A soft and easy-drinking cup, led by gentle sweetness and mellow fruit character. The aroma opens with orange zest and caramel, giving way to a delicate mix of raspberry and forest fruits. It’s light, juicy, and clean - with a lingering berry finish that becomes brighter and more expressive as the coffee cools.

Roasting Recommendation

These beans are quite dense so you’ll probably need a higher charge
temperature compared to other South American coffees. We’ve found
a standard stepping down of gas throughout your roast works well
and doesn’t cause any major crashes. Also, don’t be alarmed if you
have a much lower weight loss with this coffee compared to your
usual roasts (even after 18% DTR). Our dev time was 1:25 with 18%
DTR.

Elvis Choquehuanca farms in the hills near Copacabana, Bolivia. Since joining the Sol de la Mañana Project in 2015, he’s steadily improved both the quality and yield of his coffee. The project – set up by the Rodriguez family – provides hands-on training and regular farm visits from agronomists and engineers. It’s designed to support producers through every step of production, from planting and pruning to harvesting and processing.

Elvis now sells his coffee cherries directly to the Rodriguez family, who operate their own wet and dry mills in Caranavi. Producers in the programme receive 70% of the final sale price of their coffee, providing a more stable and rewarding income. For Elvis, this partnership has turned coffee into a reliable, long-term livelihood.
