La Cumbre de Dipilto brings together washed Catuai and Caturra from small to mid-sized farms in northern Nicaragua’s Nueva Segovia. Every lot is cupped before blending, with only those showing balance and clarity chosen. The result is a coffee that represents the best of the region: chocolate-driven sweetness, soft nutty notes, and a gentle lift of citrus.

Dipilto itself lies in the protected Dipilto–Jalapa mountain range at high elevation, where cooler temperatures slow cherry ripening and give the cup a more refined structure. Shade-grown coffee is the norm here, often under native trees that maintain biodiversity and soil health. The area has become a consistent standout in the Cup of Excellence, producing many of Nicaragua’s top-scoring coffees.

At Cafetos de Segovia’s mill, La Cumbre is dried exclusively on shaded patios. This slower, more controlled approach not only stabilises quality but also extends shelf life, helping roasters work with a coffee that holds its character over time. Taken together, it’s a lot that captures the classic profile of Nicaraguan coffee while reflecting the care and precision of the producers behind it.

Cafetos de Segovia is run by sisters Martha and Ana Alvir. After inheriting their family’s two farms, Bethania and Hortensias, they decided not only to grow coffee but to take it all the way to export. In 2015, they set up a mill and export business in Nueva Segovia, giving small-scale producers in the region a direct link to the specialty market.

The company is small but impactful. A core team works year-round, with dozens more joining during harvest. For the Alvir sisters, it’s about more than business - it’s about staying close to their family, creating jobs, and celebrating their culture. Their approach is rooted in the idea of minga - collective effort for shared benefit - bringing farmers, mill workers, and roasters together in one chain of quality.
