This red honey sun-dried Arabica is a unique offering from Crystal Valley Estate, located at 985 meters in North Coorg’s Biligiri village. Under the expertise of producer Mac Machaiah, this coffee is grown on a steep, northeast-facing slope that benefits from 70 inches of annual rainfall, hot summers, and monsoon winds. The clay-loamy soil and rugged terrain impart a distinct character to each bean.

Following a meticulous red honey sun-dried process, ripe cherries are depulped to leave a natural layer of sugary mucilage intact, which enhances the coffee's sweetness. Spread on drying beds and carefully turned, the beans develop rich flavors over 7-10 days. The resulting cup offers indulgent notes of brown sugar and sweet pastry with hints of berry-like fruit and honey. Smooth, creamy, and softly acidic, this coffee delivers a balanced, sweet, and satisfying experience.

Cupping Notes

Rich pudding-like aromatics of brown sugar and sweet pastry, getting deeper on the break. Sweet, berry-like fruit coming through in the cup rounded out by a light honey flavour. Medium texture that is smooth and balanced out with a soft acidity. Overall a pleasant cup that is sweet and creamy.
