Grown at elevations between 1,960 and 2,090 meters, this coffee benefits from the region’s distinct wet and dry seasons, which create the perfect environment for developing its exceptional quality.
The journey of Yirgacheffe Idido begins with farmers handpicking only the ripest cherries, a testament to the care and tradition passed down through generations. These cherries are then delivered to the Idido washing station, where under-ripe or damaged cherries are meticulously removed. The beans are pulped using a disc pulper, followed by a 72-hour fermentation process that enhances their complex flavors. After fermentation, the beans are washed in pristine water and dried on raised beds for 12 to 15 days, allowing them to reach the perfect moisture content.
