 Pepe Argüello's coffee from Finca Santa Cruz in Chiapas, Mexico, is a roaster’s dream, offering a rich and savory profile perfect for espresso and latte preparations. This fully washed coffee, crafted from Bourbon, Typica, and Marsellesa varietals, delights with prominent notes of red fruit and cherry, followed by a lingering aftertaste of caramel, panela, and chocolate—evoking the essence of a Black Forest dessert.

For roasters, the meticulous process behind this coffee ensures consistency and depth in every roast. Handpicked at a Brix level of over 23°, the cherries undergo a 12-hour oxidation stage, followed by open-air fermentation and careful drying over 14 to 18 days. This method locks in the coffee’s complex flavours, providing a robust and balanced cup that stands out, whether as a standalone espresso or in milk-based drinks.

Pepe and Karina Argüello have lived and breathed coffee their entire lives, growing up amidst the lush plantations of Chiapas. For Pepe, coffee isn’t just a crop—it’s a lifelong passion. After earning his degree as an agronomy engineer, Pepe returned to his roots with a singular vision: to elevate the art of coffee production in his homeland.

In 2018, the Argüello siblings took a bold step forward by acquiring Finca Santa Cruz. Fueled by a deep commitment to excellence, Pepe traveled extensively across Latin America, absorbing knowledge from the continent’s finest coffee farms. With these insights, he set out to transform Finca Santa Cruz, introducing innovative processing methods and pushing the boundaries of what Mexican coffee could achieve.

Pepe’s dedication quickly bore fruit. In his very first year, he claimed the prestigious Cup of Excellence, an achievement he has continued to repeat in 2021 and 2022. Today, Finca Santa Cruz stands as a beacon of innovation, celebrated as Mexico's most groundbreaking coffee farm. Pepe and Karina’s journey is a testament to their unwavering pursuit of perfection and their deep love for the coffee that defines their lives.

We purposefully work with small organic coffee farmers located in high altitude areas where coffee grows under optimal conditions.
