The process begins with the careful manual collection of 90% mature cherries, ensuring only the best are selected. These cherries then undergo a unique anaerobic fermentation in plastic bags for 24 hours in the shade, a method that deepens the complexity of the flavour. After fermentation, the coffee is gently washed with minimal water to retain its natural characteristics and remove impurities. Finally, the beans are sun-dried for 5 to 8 days, depending on the climate, with the grain being turned four times a day to ensure even drying.

The result is a coffee that embodies the essence of Colombia: a smooth, rich cup with notes of milk chocolate, roasted almonds, and a hint of stone fruit. Whether you're enjoying it as a morning brew or a midday pick-me-up, this coffee is a solid example of the balanced and full-bodied flavors that make Colombian coffee a global favourite.

Jonathan Gasca is a young, traditional coffee farmer from Pitalito, Huila—the heart of Colombia’s most productive coffee region. Born into a family deeply rooted in coffee farming, Jonathan's grandparents and parents focused on producing quantity over quality, selling their harvest to the highest bidder to secure a steady income.

As a child, Jonathan, like his older brother Johan, dreamed of becoming a professional soccer player. They spent their days playing soccer with friends and neighbors, eventually moving to Cali to train with a professional team. However, life away from home proved challenging. Struggling with loneliness and financial hardship, they realized that their dreams of soccer stardom were not meant to be. They decided to return to their roots in Pitalito, embracing the family tradition of coffee farming.

In 2008, the concept of specialty coffee was just beginning to take hold. Together with his uncle and brother, Jonathan started experimenting with specialty coffee on a plot of land their father had given them. Their first attempt, a Honey-processed coffee, was met with disappointment when it was rejected by the SKM cooperative due to its unconventional appearance. Despite the setback, Jonathan remained determined to pursue quality coffee, even as his family was skeptical.

Inspired by the success of the Lasso family—friends known for their exceptional specialty coffees—Jonathan continued to learn and refine his craft. His passion for understanding and producing high-quality coffee grew stronger, driven by the desire to elevate his family’s legacy and bring recognition to the coffee that has been central to their lives.

Today, Jonathan and Johan dream of achieving global recognition, not just for financial success, but to honor their family tradition and celebrate the coffee that has given them everything. They are committed to producing coffee that reflects their dedication to quality and their pride in continuing the Gasca family legacy.

Cat is a product and graphic designer and Pierre is a composer, guitarist and a singer who decided to swap careers to drink coffee all day long with a purpose.

After training and working for many years as a specialty coffee barista in the UK, we were inspired to move into the green coffee trade in the country we love and know best, Colombia.

We now apply our expertise to find the best beans at origin, whilst matching European quality standards and building long term relationships with local farmers.

After 5 years trading coffee worldwide Cat and Pierre became producers in their farm called Cata Reserva in Timana Huila. It is a 30 hectares farm which half of it is a natural reserve. As exporters with a vision on traceability saw the positive impact on the producers farm like Nestor Lasso, today they became producers to carry on exchanging knowledge now not only from a exporter perspective but through a producers view too. Cata's attention to detail on regenerating the land with clean agriculture protocols as well as connecting with a community will benefit both ends production and roasters trade.

The intelectual part of coffee is fun, we want to share what we know, we want to learn too, we want to connect better for a better trade sustainable for all.
