The process begins with carefully selected cherries that are pulped, leaving just the right amount of mucilage intact to enhance the depth of flavour. The coffee then undergoes a 48-hour fermentation in tanks, a crucial step that develops its complex character. After fermentation, the beans are thoroughly washed and placed on drying beds, where they are gently dried to achieve the ideal moisture level and flavour balance.

Since 2013, Julio has poured his heart into El Rocío, a farm nestled in the humid cloud forests of the Andes mountains. Starting his coffee journey in 2015, Julio has cultivated a variety of exceptional beans, including Caturra, Bourbon, Typica Mejorado, Gesha, and Sidra. At El Rocío, the focus is on producing high-quality washed coffees, with an adventurous spirit that also embraces honey and experimental fermentations.

El Rocío’s unique location, where the Andes meet the Pacific’s moist winds, creates a challenging yet rewarding environment for coffee production. With nighttime temperatures dipping low and daytime highs reaching up to 30°C, maintaining consistent humidity during drying is no easy feat. But Julio, ever committed to excellence, has devised a system using dehumidifiers in polytunnels and carefully timed movements of the coffee to ensure optimal drying conditions.

Julio’s dedication to organic farming is driven by a deep respect for the land’s rich biodiversity. He meticulously studies the root morphology of each variety, tailoring his approach to plant management and inputs, nurturing healthy plants and producing cherries of outstanding quality. This process demands time and patience—qualities Julio possesses in abundance.

A former aeronautical engineer with over 20 years of service in the Ecuadorian armed forces, Julio’s transition to coffee production reflects his deep passion for the craft. Despite the challenges, including the devastating rainy season of 2022 that severely impacted coffee farming in Northwest Ecuador, Julio remains steadfast. His resilience and positivity are the driving forces behind El Rocío’s continued success, turning setbacks into opportunities for growth and innovation.
