In the remote mountains above the Plan Libertad community, Don Ezequiel Diaz has spent over 20 years growing exceptional coffee. His Maragogype, a rare and often-overlooked variety, is now shining brighter than ever. With support from Edelmira, he has refined his approach, shifting to washed processing on the farm to produce a cleaner, more vibrant cup. Now, with a dedicated Maragogype nursery in the works, his focus is on pushing quality even further.

Only the ripest cherries are handpicked each evening, floated, pulped, and fermented overnight before a final rinse in fresh water. At dawn, Don Ezequiel loads the wet parchment into airtight bags and begins the steep journey down the mountain—his horse carrying the precious cargo to Edelmira’s wet mill. After ten days of careful drying and a final resting period to stabilise the flavours, the result is a beautifully clean, fruit-forward Maragogype that’s packed with clarity and character.

A fruity and versatile cup with unique sweetness. Great citrus notes progressively evolving into stone fruits and ripe mango flavours. Enjoyable both as a filter offering and espresso.

High in the mountains, just above the Plan Libertad community, Don Ezequiel Diaz tends to his three-hectare coffee farm on the edge of the El Triunfo Biosphere Reserve. It’s a remote and rugged place—getting there means a two-hour trek through dense, green terrain. But for over 20 years, Don Ezequiel has been growing some of Mexico’s most traditional coffee varieties, working in harmony with the land.

In 2021, Edelmira began collaborating with the Diaz family, drawn by the potential of their Maragogype cultivar. At first, they focused on refining quality, with Edelmira purchasing cherries and processing natural lots at their wet mill. After two years of steady improvements, 2024 marked a turning point. With Edelmira’s guidance, Don Ezequiel made the leap to washed processing on his own farm, producing a coffee that’s cleaner, brighter, and brings out the full character of Maragogype.

Now, with eyes on the future, Don Ezequiel and Edelmira are taking things further. A dedicated Maragogype nursery is in the works, ensuring that high-quality production can grow alongside their ambitions.

Origin designates both where our coffees grow and where we come from. Our teams have grown among local coffee farmers communities, inheriting the passion and experiences of prior generations. This unique knowledge of the lands and people enable us to go beyond traditional exporters reach to access producers of exceptional coffee qualities.

We purposefully work with small organic coffee farmers located in high altitude areas where coffee grows under optimal conditions. Our agronomists provide technical expertise and assist farmers in the effective implementation of rigorous organic and sustainable agricultural practices throughout the year.

Our engagement alongside farmer allows us to offer a fair compensation and a direct reward on product quality, initiating a virtuous cycle at the base of the coffee value chain.
