This naturally processed lot comes from Emiliano Ramos Gallardo and Mirian Garcia Cavero, a farming couple based in La Colpa, a remote village in the Huaranchal district of Otuzco, northern Peru.

They farm around 2.5 hectares at 2100m above sea level, growing coffee under the shade of fruit trees on steep, mountainous terrain. Coffee production is still rare in this part of Peru - specialty coffee even more so - but Emiliano and Mirian have embraced it with intent. Originally granadilla farmers, they transitioned to coffee in 2017, supported by training from the team at Proyecto Otuzco.

With limited access to water and a naturally dry climate, they focus on natural processing. Cherries are harvested in small batches, fermented in buckets for 6-12 hours, then dried on raised beds for 15-20 days. A final stage of resting under blankets helps stabilise the lot and bring it to the right moisture level.

Emiliano Ramos Gallardo and Mirian Garcia Cavero are coffee farmers in the remote, mountainous district of Huaranchal in northern Peru. Coffee is a family tradition for Mirian, while Emiliano spent years growing fruit - mainly granadillas - before the couple shifted focus. Pests and poor returns from fruit farming, combined with the goal of funding their son Everson’s education, led them to rethink their approach.

In 2017, they met Carlos and Greins from Proyecto Otuzco, who have supported their journey into specialty coffee ever since. Emiliano and Mirian now farm around 2.5 hectares in La Colpa, growing coffee under the shade of fruit trees at 2100m above sea level. The region is better known for coal than coffee, but the high altitude and dry climate offer strong potential for quality.

They raise guinea pigs, chickens, and sheep, and use the manure to produce compost and natural fertiliser. Everything is done with care and intention. They currently focus on naturally processed coffees, which suit the region’s limited water access and warm conditions, and are starting to experiment with honeys and anaerobics.
