Description

This coffee is harvested at peak ripeness and undergoes a meticulous 40-day processing journey. Initially fermented for three days in a temperature-controlled metal tank, it then experiences a secondary fermentation on mesh-covered beds in a dark room for three more days. Following this, it dries on beds in a dark environment for 15 days and completes the process under a solar roof for an additional 10 days.

Cultivated with natural fertilizers like island guano, dolomites, and decomposed coffee pulp, the coffee reflects Felix Marin's expertise as an agronomist in improving productive technologies and coffee processes. Post-processing, it is stored in Grainpro bags to ensure quality until shipment.

Producer Information

Felix Marín and his family (wife, two daughters, and a son) are the founders of Coopchebi, an agricultural cooperative in the Inka forests of Chanchamayo. They specialize in Geisha coffee and are exploring new varieties, including a Decafe Geisha tolerant to La Roya (leaf rust). The Marín family has been in the coffee business since the 1960s, with Felix becoming the first exporter of organic and fair-trade coffee in Peru after successfully changing export laws.

The family farm, located in Alto Yurinaqui, Perene, Chanchamayo, spans approximately 11 hectares on Geisha mountain. They focus on dwarf Geisha varieties tolerant to leaf rust, maintaining high-quality standards despite a lower average productivity of 552 kilos per hectare, resulting in around 88 exportable 69kg bags per year.

The Marín family exclusively delivers their coffee to Coopchebi, where the Black Honey process is conducted. Coopchebi, with 149 members, emphasizes forest conservation and environmental sustainability. As president of the National CAFE platform, Felix Marín has enabled coffee growers to access credit at a low annual rate of 3.5%. The cooperative also supports community development in health, education, and emergency services.

Khipu met Felix Marín at Ficafe (Annual Coffee Conference) in October 2022. Impressed by the quality of their coffees, they visited them in Villa Rica, toured their cooperative’s washing station, and cupped their available coffees, including this one.
