Ripe cherries are carefully harvested and mechanically de-pulped without water, retaining their natural mucilage to preserve their unique flavours. Hand-stirred on raised beds to ensure even drying, the beans undergo a meticulous natural process where only the outer skin of the cherry is removed. The result is a cup bursting with vibrant notes of blueberry and tropical fruit, delicately balanced by floral undertones and a structured, yet harmonious, acidity.
