We choose coffee that is easy to roast and suitable for all brewing methods so whether it’s coffee for espresso, V60, aeropress or filter you’ll be able to take control of your coffee from sourcing to consumption.

Roasting Recommendation

General Roasting Recommendations

For Light Roasts (City to City+ Roast)

  • Recommended for: Delicate and fruity coffees, such as Ethiopian or Central American origins.
  • Key flavours: Bright acidity, floral, and fruity notes.
  • Temperature: Aim to finish the roast between 195°C to 205°C (383°F to 401°F).
  • Roasting tip: First crack is your key indicator here. Stop the roast shortly after the first crack for a light roast that preserves the coffee’s natural fruitiness and high acidity.

For Medium Roasts (Full City to Full City+ Roast)

  • Recommended for: Balance of acidity and body, great for Latin American, African, and Pacific origins.
  • Key flavours: Nutty, caramel, and chocolatey with a hint of fruitiness.
  • Temperature: Finish around 205°C to 215°C (401°F to 419°F).
  • Roasting tip: Look for the roast to develop slightly beyond the first crack, when the bean colour is medium-brown. This will give a more balanced flavour profile with less acidity and a fuller body.

For Dark Roasts (French to Vienna Roast)

  • Recommended for: Strong, bold coffees with a rich body, often preferred for blends or specific Pacific and Latin American beans.
  • Key flavours: Bitter-sweet, smoky, chocolate, and dark caramel.
  • Temperature: Finish between 220°C to 230°C (428°F to 446°F).
  • Roasting tip: Aim to roast into or slightly after the second crack. Darker roasts will mute some of the origin characteristics but emphasise body and mouthfeel, making them ideal for espresso or bold filter coffees.

Pro Tips for All Roast Levels

  • Roasting Duration: The time between first crack and the end of the roast (development time) plays a significant role in flavour. A longer development time enhances sweetness and body, while a shorter time emphasises brightness and acidity.
  • Resting Time: After roasting, let your beans rest for 24-72 hours to allow the flavours to fully develop before brewing.
  • Experimentation: Always take notes on your roasting process. Try different roast levels and note how each impacts the flavour, sweetness, acidity, and body of the coffee.
