Produced by the Eratoi Cooperative in the high-altitude forests of Letefoho, this honey-processed coffee showcases the innovation and dedication of Timor-Leste’s emerging speciality coffee sector. Organically grown under natural shade trees and hand-harvested at peak ripeness, these cherries undergo a meticulous honey process at the centralised facility, where Simao Pedro de Deus and his team ensure exacting quality standards.

Careful attention is given throughout the drying phase, with the sticky parchment turned regularly to prevent clumping and promote even moisture loss. Over 14–16 days, the coffee develops a flavour profile that balances the clean, crisp character of a fully washed coffee with the rich sweetness of a natural. As the first honey lot from Eratoi, this coffee is an exciting addition to Timor-Leste’s growing reputation as a speciality origin—one that reflects both the skill of its producers and the potential of its land.

This community of 40 smallholder farmers has worked tirelessly to improve yields, maintain healthy coffee forests, and refine their farming practices. Their commitment to quality and sustainability has made Eratoi one of the strongest producer groups in the region.

Led by Karst Organics’ field manager, Simao Pedro de Deus, Eratoi is not only producing exceptional coffee but also inspiring the next generation of farmers. With more young people now seeing coffee as a viable livelihood, the future of this community looks bright. Karst Organics is a relationship-driven green bean exporter and importer, dedicated to bridging the gap between the coffee farmers of Timor-Leste and specialty roasters. We spend half the year in Timor-Leste, including the entire harvest season in the mountains of Letefoho, working closely with our partner farmers across 144 households. This deep investment of time allows us to truly understand their communities, language, culture, and expectations, fostering transparency and stronger partnerships.

Our direct collaboration with producers within their coffee forests and households has naturally built a foundation of mutual trust and respect. Together, we navigate challenges and respond to needs as they arise, offering support wherever it’s needed. This includes direct investments in farm-level infrastructure, specialized training in processing specialty coffee, and hands-on assistance during critical harvest times—whether it’s lifting, carrying, picking, sorting, pulping, washing, or drying coffee.
