Experimental

Experimental Process Green Coffee Beans

Unroasted experimental process green coffee for roasters. These are lots where producers have gone beyond washed, natural and honey – controlling oxygen, temperature, microbes or ingredients to push flavour in a specific direction. Expect intense, distinctive cups and limited quantities. Buy from 0.5kg with samples on most lots – most of these come from Colombia, so see our Colombian green coffee beans for the producers behind them. Looking for roasted coffee? These are raw beans you roast yourself – here's how to start.

  • What counts as experimental processing

We use the term for any lot whose processing goes beyond the three base methods: anaerobic, extended and yeast-inoculated fermentation, carbonic maceration, thermal shock, co-fermentation and infusion. Most build on a washed, natural or honey base, which is listed on each product alongside the techniques used.

  • Why producers experiment

Experimental processing lets producers add value to their best cherry, stand out in competitions and auctions, and earn more per kilo than conventional lots allow. It also carries real risk – a failed fermentation can cost a whole lot. Our article on why producers take risks on varietals and processes covers the economics.

  • Roasting experimental green coffee

These lots are usually aromatic, sugar-rich and easy to over-roast. Start lighter than you would for a washed lot of similar density, keep development controlled and cup at two levels. Samples and 0.5kg bags are the cheapest way to dial them in before committing to more.

  • Where our experimental lots come from

Colombia supplies most of them – producers such as Wilton Benitez, El Jaragual and Edinson Argote are known for thermal shock and inoculated fermentations – with further lots from Peru, Brazil, Mexico and Ecuador.

  • Honey Processed Green Coffee Beans

    Honey Process Green Coffee Beans

Smooth, sweet green coffees with gentle fruit and body, developed through honey processing.

  • Colombia Green Coffee Beans

    Colombian Green Coffee Beans

From clean and balanced to bold and experimental, Colombia offers diversity, reliability, and standout flavour.

  • Rwanda Green Coffee Beans

    Rwandan Green Coffee Beans

Rwandan coffees with bright acidity and balance, shaped by smallholders and a national push for quality.

  • Natural Dry Processed Green Coffee Beans

Green coffees processed in whole cherry, bringing jammy fruit, big body, and layered sweetness.

  • Washed Green Coffee Beans

    Washed Green Coffee Beans

Clean, vibrant washed green coffees that highlight the unique character of place, process, and variety.

  • Aeropress Brewer

    Green Coffee Beans for Aeropress

Green coffees that bring out the Aeropress’s best – fuller body, deep sweetness, and complexity.

Your questions, answered

What is experimental coffee processing?

Any processing that goes beyond standard washed, natural or honey methods – for example anaerobic fermentation, carbonic maceration, thermal shock or yeast inoculation – used to develop specific flavours.

Are experimental coffees flavoured?

Most aren't. They develop their flavour entirely from the coffee and its fermentation. Infused or co-fermented lots involve other ingredients; we label those clearly so you know what you're buying. See our infused range.

Why are experimental coffees more expensive?

They need extra equipment, labour and monitoring, use the producer's best cherry, and carry a risk of failure. Volumes are small.

Are experimental coffees good for beginner roasters?

They're less forgiving. If you're new to roasting, learn your roaster on a washed lot first, then try experimental coffees with a light, controlled profile.

Do you offer samples or trial batches before committing to larger orders?

Yes, we offer samples for most of our coffees. If you need a larger sample than what’s typically available, we recommend trying one of the smaller quantity options listed on our site. That way, you can test the coffee before committing to a larger order.

What sizes or quantities can I order?

We offer coffee starting from as little as 0.5kg (1 lb) all the way up to full sacks. If you’re looking for larger quantities than what’s listed on our site, just get in touch! We’d be happy to help you organise and place a custom order. We're here to make sure you get exactly what you need.
