Grown at 1,680–1,800 masl on the experimental El Fénix farm in Calarcá, this single-varietal Tabi reflects both the farm’s quality focus and its community-driven mission. El Fénix is more than a farm - it’s a post-harvest lab and training space, designed to support local producers and improve processing outcomes through shared infrastructure and a fair pricing system.

This lot was processed using an anoxic washed method. Cherries were sealed under a water pillow for 48 hours of oxygen-free fermentation, with the system also helping stabilise temperature throughout. After pulping and washing, the coffee was dried on raised beds for up to three weeks.

El Fénix is more than a farm - it’s a living experiment in what the future of coffee production can look like. Perched at 1,680–1,800 masl in the hills of Calarcá, Quindío, the farm was built with a long-term vision: to combine rare-variety coffee production with education, experimentation, and community support under one roof.

It functions as an organic coffee forest, post-harvest lab, and training centre. Rare varieties like Tabi, Gesha, Wush Wush, Moka, Pink Bourbon, Sidra, and Ombligón are grown here under careful management, with every step of processing designed to build knowledge and share insight. Producers and roasters alike visit the farm to explore new post-harvest techniques, attend courses, and collaborate on quality improvement.

Alongside its experimental approach, El Fénix also supports local producers through a developing community wet mill, crowdfunded to give neighbouring farmers access to better processing facilities and a fairer pricing system. By purchasing cherry instead of parchment and paying producers in two stages - an initial fixed price and a second variable payment based on final sale - the farm helps improve both income stability and cup quality.
