This Yellow Honey Typica comes from Emiliano Ramos Gallardo and Mirian Garcia Cavero, farming at around 2,100 metres in Huaranchal  a small district in Peru's La Libertad region where fewer than ten families currently produce specialty coffee. The altitude and dry mountain climate create slow cherry maturation and well-developed flavour.

Emiliano originally focused on fruit production, dedicating most of the farm to granadilla before pests, unstable yields, and low profitability made that increasingly difficult — particularly as the family worked to support their son Everson's education. The shift into specialty coffee came in 2017 through their meeting with Carlos and Greins from Proyecto Otuzco. What began as technical training became a complete change in direction, and the family has worked with the project ever since. Proyecto Otuzco started as a single-district initiative in Huaranchal and has grown into a consolidated regional model, now supporting twelve families across three districts within Otuzco, with a wider network extending into other provinces of La Libertad. Honey processing has become a particular area of focus for the Ramos Garcia family - produced in small batches, refined over five years, and consistently well-received for its clarity and balance.

Harvesting is fully selective. After picking, cherries undergo an initial open fermentation of 12 to 18 hours before pulping with a controlled amount of mucilage left on the parchment. The coffee then goes into sealed bags for a further 72-hour dry fermentation under low-oxygen conditions, before drying on raised beds for 20 to 22 days. The result is a honey coffee that offers freshness and clarity rather than the heavier intensity more typical of naturals — a style the Ramos Garcia family find as enjoyable to produce as it is to drink.

Harvesting is fully selective, with only ripe cherries picked.

Fermentation

72hrs dry

Cherries undergo an open, dry fermentation for approximately 12 to 18 hours. For the honey lots, the cherries are then pulped, leaving a controlled amount of mucilage intact. The parchment is placed into closed plastic bags for a 72-hour dry fermentation, allowing microbial activity to develop under low-oxygen conditions while maintaining temperature stability.

Drying

20-22 Days

Drying takes place over 20 to 22 days on raised beds, with daytime temperatures typically ranging between 30 and 35°C. Despite the extended drying period, the coffee retains a yellow honey appearance rather than progressing into darker honey styles. Drying continues until the parchment reaches approximately 11% moisture, after which the coffee is rested to stabilise before milling.

Emiliano Ramos Gallardo and Mirian Garcia Cavero farm in La Colpa, a village in the Huaranchal district of Otuzco in northern Peru. For Mirian, coffee is part of her family history. For Emiliano, the move into specialty production came later, through their introduction to Proyecto Otuzco in 2017.

The farm sits at around 2,100 metres in a dry, mountainous landscape more commonly associated with coal mining than coffee. Across approximately 2.5 hectares, the family grows Red Caturra and Typica under a canopy of fruit trees, which provide shade and supplementary income. Livestock - guinea pigs, chickens, and a small number of sheep - are kept primarily for composting, with soil health and biodiversity forming the foundation of how the farm is managed. Their son Everson is now an active part of the operation, representing a new generation fully embedded in specialty coffee.

Honey processing holds a particular place in their work. Although produced in small batches of five to six quintals per season, these lots represent years of deliberate refinement. Emiliano and Mirian are self-driven producers, constantly reading and experimenting to deepen their understanding of fermentation and drying.

Proyecto Otuzco has grown from a single-district initiative into a regional model supporting twelve families across Huaranchal, Usquil, and Charat, with the wider Sierra Liberteña Project extending into Gran Chimú, Trujillo, and Bolívar. In 2024 the project organised the first Liberteña Cup - a blind competition run under Cup of Excellence protocols, the first of its kind in the region. Usquil was the standout origin, with the Sánchez and Julca families taking first and third place, and Cascas taking second.

Is your coffee unroasted?

Yes – all the coffee we sell is raw, unroasted green coffee unless clearly marked as a roasted sample. It might sound obvious, but it's one of the most common questions we get! If you're buying from us, you're getting green coffee ready for roasting.

How long does delivery take, and can I track my order?

We usually pack and dispatch orders within 1–2 working days. Once it’s on the move, you’ll get a tracking link so you can follow it all the way to your door.

For UK and EU deliveries, most orders arrive within 2–5 working days. International shipping can take a little longer depending on customs, but we’ll keep you updated every step of the way.

If you need your coffee urgently, you can select an express shipping option at checkout.

How does your quality guarantee work?

We stand by every coffee we offer — if the quality doesn’t match the listing, we’ll refund or credit you. No fuss.

No. If you’re ordering from the UK or the Europe, there are no customs charges or hidden fees.

We ship UK orders from our UK warehouse and EU orders from our EU-based warehouse, so everything stays within the region.

For UK customers, the price you see on the product page is the final price.

For EU customers, VAT rates vary by country, so your final price (including the correct local VAT) is shown clearly at the final step of checkout before you pay.

Do you offer any roasting advice for green coffee?

Absolutely. We work with roasters of all levels – from complete beginners to seasoned pros – and we’re always happy to share what we know.

You’ll find starter tips and roast profiles on our blog, or you can drop us a message if you’ve got questions about a specific coffee. A medium roast is usually a great place to start - it gives you a balanced view of the coffee’s flavour, and you can adjust from there.

What is your return policy if I'm not satisfied with the coffee do you offer any guarantees?

We want you to be happy with every coffee you try. If something doesn’t feel right - whether it’s a quality issue or your order isn’t what you expected - just get in touch. We’ll always do our best to put it right, whether that means a replacement, refund, or store credit.

What do your flavour notes mean?

Flavour notes describe the natural characteristics found in the coffee - shaped by things like variety, processing, and how it’s cultivated.

You might notice hints of chocolate, red fruit, florals or citrus. These aren’t added flavours - they’re subtle notes that come through when a coffee is grown, processed, and roasted with care. We include detailed origin info and flavour profiles on every product page to help you choose the right coffee for your taste.

Can I sample the coffee before purchasing?

Yes - we offer samples for nearly all of our coffees. There’s a small fee to cover the cost of packaging, green coffee, and prep, but it’s a great way to try before committing to a larger order.

Samples may not be available on limited-release or rare coffees due to low stock. If you’re unsure, just get in touch - we’re happy to help you find the right fit.

Unfortunately we can't offer samples in the EU yet.

How does the Cupping Score translate into taste or quality?

The cupping score is a quality grading system used by coffee professionals. It’s based on how a coffee tastes in a controlled tasting — looking at things like sweetness, balance, acidity, and complexity.

80–84 = Clean and consistent with good flavour — great everyday coffees.

85–87 = More complexity, distinct flavours, and refined sweetness.

88+ = Exceptional – rare, expressive coffees with standout characteristics.

Scores help you understand what to expect in the cup, but taste is personal. We include flavour notes and process details on every product page to help you find what suits your style best.

What’s the best way to brew this coffee once it’s roasted?
