This coffee comes from Finca La Trinidad, a family-run farm in Torreblanca, Cusco, led by Alexander Robles Loayza and his brother Hector. The farm has fully transitioned from conventional to specialty production, with a focus on high-quality varietals and regenerative agriculture.

The coffee is processed using a natural anaerobic method. Ripe cherries are fermented in sealed tanks for six days, starting at a Brix level of 19. The slow, controlled fermentation is followed by a long drying phase - 45 to 60 days under shade - allowing for steady moisture loss and stable cup quality.

Everything is grown and processed on-site, surrounded by native trees, fruit plants and diverse vegetation that supports soil health and helps the coffee thrive. It’s a hands-on, family-led approach rooted in care, learning, and commitment to quality.

Alexander Robles Loayza runs Finca La Trinidad with his brother Hector, on land named after their mother, Trinidad Leonor Loaiza. Located in the Yanatile district of Cusco’s Calca province, the farm spans 3 hectares and sits in one of the region’s most ecologically diverse zones.

The move from conventional to specialty coffee began in 2019 after Alexander was introduced to the Geisha variety and inspired by neighbours at La Margarita Coffee Reserve. That first encounter kicked off years of experimentation - learning new processes, planting high-value varietals, and rethinking how they worked with the land. The farm now includes Geisha, Catuai, and Sidra (set for its first harvest in 2025), and is surrounded by fruit trees, cassava, and native species planted to maintain biodiversity and protect soil health. The Robles family continue to build on their early success, and are part of a growing wave of quality-focused producers in this lesser-known corner of Cusco.
