    Coffee is grown across six main regions: Copán, Montecillos, Comayagua, El Paraíso, Agalta and Opalaca. Each one has its own microclimate and elevation range, which means flavour profiles vary widely. Most coffee is produced by smallholder farmers working on modest plots, often with family labour and support from local cooperatives. The diversity across these regions is one of Honduras’s greatest strengths.

    The washed process is dominant and reflects the country’s commitment to clarity and balance in the cup. However, producers are increasingly experimenting with natural, honey and controlled fermentation processes. These newer approaches are still smaller in scale, but they add welcome variety - from clean and sweet to more fruit-forward and textured coffees.

    Harvest generally runs from November through April, with fresh coffees shipping from late spring into early summer. Higher farms harvest a little later, but the seasonal rhythm is consistent year to year.
