Sirinya Ripasso is a truly unique coffee, meticulously crafted through an innovative anaerobic fermentation process. Cherries are first floated and then fermented in plastic barrels with local yeast until the pH reaches 3.5-4.0, carefully controlling microbial activity for a distinctive flavor profile. Following fermentation, the cherries are sun-dried on outdoor racks before undergoing a slow, temperature-controlled drying process, ensuring the perfect balance of moisture.

This coffee offers an unforgettable tasting experience with notes of Asian pear, elderflower cordial, and pomegranate juice. Sirinya Ripasso is a testament to the dedication and innovation that defines Sirinya Coffee, delivering a cup that is as unique as the process behind it.

Doi Chang was once a region known for opium cultivation, a practice that spanned over a century. But with the help of government and NGO initiatives in the mid-1980s, this land began its remarkable journey of change. Opium fields gradually gave way to coffee plants, and today, Thailand stands as a model of successful alternative development.

For over 40 years, the farmers of Doi Chang have grown coffee with dedication and skill. But under the guidance of Goh and Oil, these farmers are learning to take their craft to new heights. From nurturing the soil with organic farming methods to refining every step of the processing journey, Sirinya Coffee is empowering local farmers to transform their already exceptional coffee into specialty-grade beans. This elevation in quality not only commands higher prices but also opens doors to new markets, ensuring a brighter future for the entire community.
