Hatuhei coffee is grown at 1,500–1,600 masl in the remote highlands of Letefoho, where cool temperatures and rich volcanic soils create ideal conditions for slow, even cherry maturation. This fully washed lot is processed using traditional methods, with cherries carefully selected and pulped before undergoing fermentation and drying on raised African beds. The result is a clean, well-structured cup with a balance of sweetness and brightness.

Shade-grown beneath native Ai-Kakeu (Casuarina) and Ai-Samtuku (Albizia) trees, this coffee benefits from natural biodiversity and organic farming practices. Farmers use composted cherry skins and other natural fertilisers to nourish the soil, with no chemical inputs. This slow, careful approach to cultivation and processing ensures consistency and quality, making Hatuhei a standout coffee for both filter and espresso.

Hatuhei is one of the most remote coffee-growing communities in Letefoho, where poor road infrastructure makes access difficult, especially during the wet season. Despite these challenges, the 25 farmers of the Hatuhei Cooperative have steadily improved their coffee production through better farming practices and sustainable pricing.

Over the past five years, the cooperative has worked closely with its sourcing partners to rehabilitate coffee farms, ensuring long-term productivity. Led by Carlos de Deus, with support from field manager Simao Pedro de Deus, farmers have adopted pruning and replanting techniques that improve both yield and quality. More than 200 new coffee seedlings were planted last year, a direct result of ongoing partnerships with UK roasters.

With a strong focus on organic farming and careful processing, the Hatuhei Cooperative is building a more sustainable future for its members while producing high-quality coffee that continues to gain recognition in the UK and European speciality markets.

Karst Organics is a relationship-driven green bean exporter and importer, dedicated to bridging the gap between the coffee farmers of Timor-Leste and specialty roasters. We spend half the year in Timor-Leste, including the entire harvest season in the mountains of Letefoho, working closely with our partner farmers across 144 households. This deep investment of time allows us to truly understand their communities, language, culture, and expectations, fostering transparency and stronger partnerships.

Our direct collaboration with producers within their coffee forests and households has naturally built a foundation of mutual trust and respect. Together, we navigate challenges and respond to needs as they arise, offering support wherever it’s needed. This includes direct investments in farm-level infrastructure, specialized training in processing specialty coffee, and hands-on assistance during critical harvest times—whether it’s lifting, carrying, picking, sorting, pulping, washing, or drying coffee.
