mariano-asturias-honey-parainema
Mariano Asturias Honey Parainema

Mariano Asturias started in coffee in 1995 as a young man, working as a day labourer on other people's farms. He saved enough from that work to plant coffee of his own, and over the years, with his wife and children behind him, he expanded it to the three hectares of El Pino, in Toriles, Comayagua, at 1,650 to 1,700 masl. He is the third generation of his family to grow coffee, and it is a passion he has held since childhood as much as a family legacy. Mariano wants to keep improving his farming techniques and the quality of his coffee, aiming for better prices, so that the farm can give his seven children access to education, health and good nutrition.

His lot is Parainema, a variety bred by IHCAFE, Honduras' national coffee institute, to resist leaf rust and nematodes, and one of the main rust-resistant varieties grown in the country. It has also proved itself on the cupping table, with Parainema lots winning Honduras' Cup of Excellence in 2015 and 2017.

This lot is a honey processed where cherries picked at peak ripeness spend 64 hours fermenting inside sealed plastic bags. After depulping, the coffee ferments for a further 35 hours with its mucilage still on, in a dry, anaerobic environment built from plastic bags and a wooden pile. It then dries for 25 to 30 days on covered African raised beds.
