The farm sits between 1,600 and 1,700 masl and grows Castillo, Colombia and Cenicafé varieties. This is our washed Colombian staple for now - holding the spot until our next lot lands. Toño runs a tight harvest - pickers are paid a premium of 100 pesos per kilo for selecting only fully ripe cherry, and from there the coffee goes through a double fermentation. Cherries ferment for around 12 hours before pulping, then the beans sit for a further 24 hours to break down the remaining mucilage.
