Her land supports much more than coffee: alongside it she grows enset (false banana) and fruit trees, feeding a family of twelve children, six daughters and six sons. Since 2018, when Ethiopia's exporting rules changed to let smallholders export their own coffee, Aragash has held an export licence of her own. She and her family produce an average of 800 kg of green coffee per hectare, and in the off-season the whole family works together on the farm's agronomy.\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003eThis lot is a natural, processed entirely at the family's farm. Aragash and her family hand-pick the cherries and lay them out on raised African drying beds, where they dry for 15 to 18 days. The cherries are turned regularly so they dry evenly, and covered at night and whenever it rains. The dried coffee then goes to the Gedeb dry mill for hulling and the removal of defects and debris, and on to Dunkem for further milling, where it is destoned, screened and run through a gravity and colour sorter. His name carries meaning too: Nega- means \"peace\" in the Oromo language.\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003eIn 2021, Negash obtained an Agard disc pulper, which let him begin processing washed coffees for the first time. This lot follows that process. After harvesting, he pulps the cherries with the disc pulper and soaks them overnight in a tank of water. The next morning the coffee is agitated to remove the mucilage, and the parchment is moved to raised beds to dry for 10 to 12 days before being bagged and transported to the dry mill. It makes for a diverse, natural setting to grow coffee in.\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003eThe variety here is 74158, one of the improved selections released by the Jimma Agricultural Research Center, one of Ethiopia's federal research bodies. It was approved for release in 1979, and came out of the Metu Bishari Selections, taken from mother plants in the Metu district of the Illubabor zone, then propagated for its high yield potential and resistance to coffee berry disease. Niguse grows it alongside 74110, the two being locally recommended varieties well suited to his area.\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003eHe processes this lot with an anaerobic fermentation, sealing the cherries in barrels for 56 hours before spreading them over raised drying beds in the open sun for 20 to 25 days. In recent years Tadessa has secured enough of a supply to start producing anaerobic coffees, and this lot is one of the results. The cherries ferment for a full 96 hours, then dry for 30 days under shade nets.
