It's grown at Mooleh Manay Estate in Coorg, India, at 850 to 1,000 masl, and it comes with a process that's as unusual as the species itself, a natural with carbonic maceration.\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003eMooleh Manay is a 68-acre family-run farm on the backwaters of the Harangi Reservoir in North Coorg, where elephants pass through regularly, on land that has been in the Gundugutti family since the early 1800s. Akshay Dashrath and Komal Sable live on the farm and run it with no weedicide, fungicide or pesticide, growing Arabica, Robusta and Excelsa under a canopy of silver oak, rosewood and native trees, with pepper, citrus and fruit trees mixed in. A network of on-farm sensors tracks temperature, humidity and soil conditions to guide their decisions through the season, and they lean on naturals and honeys to save water.\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003eThe processing borrows a technique from winemaking. After 48 hours of drying before fermentation, the whole cherries are sealed in a tank flooded with carbon dioxide, at pressures up to 0.5 bar, for two carbonic maceration stages of 24 and 60 hours, followed by a 48-hour aerobic fermentation.
