At this elevation, cooler temperatures slow cherry development, pushing the harvest slightly later than lower-altitude lots and allowing more time for sugars to concentrate in the fruit. The coffee is fully washed and processed by each of the 40 smallholder farmers individually in their own households, using traditional methods passed down through generations. Cherries are selectively picked, floated, and pulped before being submerged and fermented for 40–44 hours. The beans are then washed in up to six to eight passes, laid out on raised drying beds, and turned regularly over 10–14 days until reaching an optimum moisture level of 10.5%. After a six-week rest, parchment is transported to Dili for dry processing, screen grading, and a final hand sort before export.\u003c\/p\u003e\n\u003cp class=\"font-claude-response-body break-words whitespace-normal leading-[1.7]\"\u003eTimor-Leste is one of the more unusual origins in specialty coffee — a country where coffee was introduced by Portuguese colonisers in the 1600s, became the leading export by the 1900s, and then suffered significant neglect during the Indonesian annexation that lasted until 1999. Today, farmers across the country are working to rehabilitate their coffee forests and establish Timorese coffee in the global specialty market.
