It's a departure from the natural processing more commonly used across South Sudan, where cherries are typically dried whole and, on a smaller scale, pounded by hand in a wooden bowl.\u003c\/p\u003e\n\u003cp class=\"font-claude-response-body break-words whitespace-normal\"\u003eThe coffee itself is Excelsa, a distinct species in its own right, hardy and disease-resistant, and indigenous to South Sudan — a fact confirmed through genetic testing by the Royal Botanic Gardens, Kew, which also found high genetic diversity in the variety, pointing to strong potential for further selection and improvement.
