The shift into specialty coffee came in 2017 through their meeting with Carlos and Greins from Proyecto Otuzco. What began as technical training became a complete change in direction, and the family has worked with the project ever since. Proyecto Otuzco started as a single-district initiative in Huaranchal and has grown into a consolidated regional model, now supporting twelve families across three districts within Otuzco, with a wider network extending into other provinces of La Libertad. Honey processing has become a particular area of focus for the Ramos Garcia family - produced in small batches, refined over five years, and consistently well-received for its clarity and balance.\u003c\/p\u003e\n\u003cp class=\"font-claude-response-body break-words whitespace-normal leading-[1.7]\"\u003eHarvesting is fully selective. After picking, cherries undergo an initial open fermentation of 12 to 18 hours before pulping with a controlled amount of mucilage left on the parchment. The coffee then goes into sealed bags for a further 72-hour dry fermentation under low-oxygen conditions, before drying on raised beds for 20 to 22 days.
