The ambitions have grown since then. Lot 20 now works with a network of farmers across west Kenya and has built a reputation for pushing the boundaries of coffee processing - experimenting with different fermentation methods, from fruit pulp and specialist yeasts to unique fungi, all with the aim of improving cupping quality, raising the value of the lots they sell, and channelling that worth back to the farmers they buy from.\u003c\/p\u003e\n\u003cp class=\"font-claude-response-body break-words whitespace-normal leading-[1.7]\"\u003eFor this lot, sorted cherries are added to fermentation barrels alongside Koji culture and pulped oranges. The oranges are grown by the same farmers who supply their coffee cherries to Lot 20, providing them with an additional income stream.
