He planted his first coffee there, put the earnings from those early harvests back into the land, and kept expanding until it became Los Cedros, in El Paraíso, Honduras, at 1,350 to 1,500 masl. He is the third generation of his family to grow coffee, and it is the family's only income, so each year they work to produce something worth drinking for the people who buy it.\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003eThe variety he grows is Honduran through and through. Parainema was bred in the 1980s by IHCAFE, the national coffee institute, from Sarchimor lines to stand up to leaf rust and nematodes. Varieties built for disease resistance have a reputation for giving up cup quality in exchange, and Parainema is one of the strongest arguments against that, with lots winning Honduras' Cup of Excellence in 2015 and 2017.\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003eDanilo's lot goes through two separate fermentations. The cherries are picked at peak ripeness and sealed in plastic bags for 50 hours of anaerobic fermentation.
