He's part of a multi-generational family of coffee farmers, and father to David Flores, founder of Finca El Morito - a 150-hectare farm known for its Yellow Caturra, which has more recently begun experimenting with new varietals including Geisha and this Marshell. Faustino specialises in innovative cultivation techniques and exploring new coffee varietals, a passion rooted deep in the family's tradition.\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003eMarshell itself is a genuinely unusual varietal, and its exact ancestry remains debated. It's often described as a natural mutation of Bourbon, but genetic testing on some samples - including Khipu's own testing at RD2 Vision - suggests it may in fact be a rare form of Catimor, or linked to Costa Rica 95, a variety with Robusta lineage. Whatever its true origins, its flavour in the cup goes well beyond a typical Catimor profile, moving into floral and fruity territory that's driven real interest in the variety since it won the Cup of Excellence in 2019. The uniformity of its genetics suggests it likely came from a breeding programme rather than a chance graft between varieties.\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003eThis lot is processed with real precision. Cherries are selectively harvested and floated to ensure only ripe fruit remains, then placed in sealed tanks for a 72-hour anaerobic fermentation.
