Across 150 hectares in the northern Central Colombian Andes, perfectly positioned at 1,500 masl in Amalfi, Antioquia, Jorge has built something rare: pine plantations for sustainable timber sitting alongside carefully conserved native forest, with seven coffee varieties woven through it all under the shade of plantain trees and native agroforestry species. It's a farm that ranges from the traditional (Castillo\/Colombia) to the genuinely exotic (Pink Bourbon, Gesha), with newer plantings of Typica Mejorado, Sidra, Laurina and Eugenoides already taking root.\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003eThis Rosado (aka Pink Bourbon) is the product of that same meticulous mindset. It's processed as washed with thermal shock - a striking nine-stage sequence built entirely around precision. Cherries are hand-harvested at a minimum 90% ripeness, floated to remove anything green, overripe or dry, then oxidised in food-grade drums for 24 hours before being dry-pulped. A second 24-hour oxidation strips the mucilage, followed by a deliberate 45°C wash that shocks the coffee into its next phase. From there it ferments for 36 hours below 25°C with a specific yeast, before a 5°C wash locks the fermentation in place.
